Habanero Jalapeño Hot Sauce

Ingredients
- 10 habanero peppers
- 5 jalapeño peppers
- 4 cloves garlic
- 1/2 cup white vinegar
- 1/4 cup water
- 1 tablespoon salt
- 1 tablespoon sugar (optional, to balance heat)
Directions
- Wash and remove stems from all peppers. For a milder sauce, remove some or all of the seeds.
- Peel the garlic cloves.
- Combine peppers, garlic, vinegar, water, and salt in a saucepan.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until peppers are soft.
- Let cool slightly, then blend until smooth using a blender or immersion blender.
- Strain through a fine mesh sieve for a smoother consistency (optional).
- Taste and adjust salt and sugar as needed.
- Pour into sterilized bottles and refrigerate.
Notes
- Safety: Wear gloves when handling habaneros! Avoid touching your face or eyes.
- Heat level: Adjust the ratio of habaneros to jalapeños based on your heat preference.
- Storage: Keeps refrigerated for up to 6 months.
