Habanero Jalapeño Hot Sauce

  1. Wash and remove stems from all peppers. For a milder sauce, remove some or all of the seeds.
  2. Peel the garlic cloves.
  3. Combine peppers, garlic, vinegar, water, and salt in a saucepan.
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes until peppers are soft.
  5. Let cool slightly, then blend until smooth using a blender or immersion blender.
  6. Strain through a fine mesh sieve for a smoother consistency (optional).
  7. Taste and adjust salt and sugar as needed.
  8. Pour into sterilized bottles and refrigerate.
